Lemon and coriander couscous

This is an easy and yummy side dish that goes extremely well with our vegan zucchini ravioli.

Be aware this is not gluten free.

  • 1 cup dry couscous
  • 1 1/2 cup boiled water / stock
  • 1 tsp olive oil
  • 1 juice of a lemon
  • 1/4 loose cup coriander chopped


  1. Add the dry couscous to a large bowl and pour the boiled water on top. 

  2. Add olive oil and lemon juice and stir once.

  3. Cover the bowl with a lid or a plate and let it sit for 5 min.

  4. Fluff it with a fork, add a bit a salt & pepper and it's ready !
