Vegan Gluten-Free Pancakes

The same fluffy, delicious pancakes that your mum used to make you on Sunday mornings, but gluten and cruelty free ! So even more yummy !

Ingredients

  • 3/4 cup gluten-free flour
  • 1/4 cup almond meal
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 Tbsp maple syrup
  • 1 tsp vanilla
  • 1/4 cup apple sauce
  • 1 cup almond or rice milk

Instructions

  1. In a bowl whisk together the flour, almond meal, baking powder, cinnamon and salt.

  2. In a separate bowl, mix together the maple syrup, vanilla, applesauce and milk.

  3. Pour the wet ingredient into the dry ingredients, little by little making while stirring, making sure you get all lumps out of the batter.

  4. Using a ladle, pour the mixture into a hot greased pan. Let cook for a couples of minutes until bubbles start to pop out. Flip over and cook for another couples of minutes.

  5. Serve hot with maple syrup and fruits.
